Thanksgiving Dinner, Civil War Style

We cannot, alas, just go to one of our many period cookbooks and reprint the section on "Thanksgiving Dinner." They did not have a Thanksgiving holiday in anything resembling the way we do now. Despite claims of antiquity going back to the Pilgrims and all, it really wasn't until the 20th century that the notion of having a holiday on (usually) the last Thursday of November was carved in stone.

* 1 pound beef round
* Salt & freshly ground pepper
* 1 1/2 tablespoons canola oil
* 2 onions
* 1 green bell pepper
* 1 red bell pepper
* 5 cloves garlic
* 2 jalapeno peppers
* 2 tablespoons ground cumin
* 2 tablespoons chili powder
* 1 tablespoon paprika
* 2 teaspoons dried oregano
* 12 ounces dark or light beer
* 1 28-ounce can diced tomatoes
* 8 sun-dried tomatoes
* 2 bay leaves
* 3 19-ounce cans dark kidney beans
* 1/4 cup chopped fresh cilantro
* 1 1/2 teaspoons sugar mixed with 1/4 teaspoon ground cinnamon

A Mexican Chicken Casserole

A Mexican chicken casserole recipe with chicken, taco sauce, and seasonings, along with taco chips and cheese.
INGREDIENTS:

* 4 boneless chicken breast halves, cooked, cubed
* 1 can Rotel
* 1 can cream of mushroom soup
* 1 can cream of chicken soup
* 1/2 cup chicken broth
* 1 package taco chips or Doritos
* 1/2 to 3/4 cup grated American cheese, Mexican blend, or Classic Melts blend

PREPARATION:
In a saucepan, combine and heat tomatoes, soups, Rotel and broth. Line bottom of casserole dish with taco chips. Add mixture of chicken and sauce. Top with grated cheese. Bake at 350° until bubbly and hot.
Serves 4.
